From fine dining restaurants to residential dining, USC Hospitality serves over 65,000 students, athletes, faculty, and staff, as well as our many visitors. Hospitality is one of the six core business units that comprise USC Auxiliary Services and one of the largest employers on campus. We are renowned for our fresh take on self-operated food concepts with 43 restaurants between both campuses. The team at USC Hospitality is led by innovative executive chefs and directors who strive every day to craft nourishing and wholesome alternatives for our hungry Trojan Family and our guests. 

We are seeking an Associate Director of Restaurants and Catering to join our rapidly growing team.

The Opportunity:

Our Hospitality team is committed to providing exceptional meals and extraordinary customer service in all of our diverse locations. Your drive and passion will lead our team to exceeding all of our customers’ expectations. As our Associate Director, you will oversee all of Restaurant and Catering services, and ensure that all of these live up to the University values of excellence. Your strategic, long-term management will keep our team responsive to our evolving customers!

The Accountabilities:

  • Responsible for short and long term planning and the management of the Food and Beverage operations in the front and back of the house.
  • Responsible for financial performance including but not limited to annual budgeting and operating plans, covers/revenue goals, and achieving budgeted expense targets.
  • Coordinate food and beverage operations with campus partners, departments, external clients, and the hotel to ensure efficient guest service.
  • Resolve customer complaints as appropriate to maintain a high level of customer satisfaction and quality.
  • Implement procedures to increase guest and staff satisfaction.
  • Maintain the quality and consistency of the guest experience.
  • Maintain USC Hospitality standards of service and ensure their implementation.
  • Performing daily walk-throughs to ensure full compliance with the LA Dept. of Health code, state, local, and university standards.
  • Ensure positive and creative environment for managers and employees, through goal setting, evaluations, and facilitation of communication.
  • Produce weekly profit and loss reports, assist with annual budget process, oversee sales and cost forecasting, and ensure profit and loss of Hospitality.
  • Oversee all food production and responsible for ensuring quality meals are served to all customers.
  • Develop systems to improve operational efficiency and facilitate volume growth. Ensure the adherence to those systems internally.
  • Assist USC Hospitality with complex or non-routine purchasing needs. Makes recommendations regarding selection of large acquisitions and specialized teams. Review large requisitions and annual contracts for conformance to USC Hospitality standards and makes recommendations and revisions accordingly.
  • Approve purchases and review all contracts. Responsible for maintaining and auditing of existing and potential contracts and/or agreements.
  • Direct the development of systems, methods, and procedures to facilitate efficient and effective departmental operations.
  • Responsible for identification and definition of costs, sales, and margins for every operating unit in USC Hospitality.
  • Maintain OSHA workplace and all other state, federal, and USC policies and procedures regarding health and safety standards.
  • Perform other related duties as assigned or requested. The University reserves the right to add or change duties at any time.

The Qualifiers:

  • Education: Bachelor’s Degree.
  • Experience: 7 years.
  • Expertise:
    • Directly related professional and supervisory experience in diverse Hospitality and/or Food Services environment.
    • Demonstrated success in strategic and long-range Hospitality Management and/or Food Services.
    • Excellent communication and interpersonal skills.
    • Ability to train, coach, counsel, and hire employees. Experience within union environment.
    • Budgeting and purchasing experience.

What We Prefer:

  • Master’s Degree.
  • 5 years of experience.
  • Experience in University setting.
